The Mexican Food (And Super Bowl) Party Extravaganza!!!

Be prepared to drool people. Be prepared...
Jeremy and I were meant to attend a super bowl party with some of his law school friends, but they weren't playing nice so we're staying in tonight have having our own personal party complete with yummy homemade mexican goodness. *grin*










For anyone interested, here is the Mexican Lasagna recipe:
1 pound ground beef
1 package taco seasoning
water
1 16 oz. can of refried beans
1 cup salsa
flour tortillas
shredded cheese
Brown meat in a skillet, then drain and return to skillet. Mix taco season with enough water to make a thin paste. Mix paste with meat in skillet. Add Beans and salsa and mix thoroughly. let simmer for a few minutes, then set aside. Spray an 8 inch square baking dish with pam. Cover bottom of pan with tortillas, then add a layer of meat mixture. Top with shredded cheese. Repeat layers until out of meat mixture. Bake uncovered in the over for 30-40 minutes at 350 degree. Makes one small casserole.
Notes: We doubled the recipe. We also used ground turkey instead of beef, and spinach veggie tortillas--it worked great, so I think it's safe to say you can play with the ingredients some. *smile* We also used no fat refried beans and weight watchers cheese. It's all good! Also note that if you become so excited about the lasagna that you forget to mix in the salsa, it's ok. The lasagna won't be ruined, and in fact still tastes great if you just put a dollop of salsa on top of your lasagna slice. *grin*
